Our quest for the perfect coffee takes us to Mexico this month for a very unique and rare coffee - El Triunfo. Mexico has not been known in the High-End Specialty Coffee world until recently, but the farmers of El Triunfo Verde show that Mexico plays in the first league and can produce a top notch Specialty Coffee that clearly deserves to be selected as our coffee of the month.
The farms contributing to the Triunfo Verde Coop are located in the buffer zone of the El Triunfo Biosphere Reserve. The biosphere is located in the highlands of the Sierra Madre de Chiapas and the El Triunfo Biosphere Reserve is one of the world’s most diverse forest reserves. This reserve contains Mesoamerica’s largest continuous cloud forest, and it serves as a refuge to thousands of plant and animal species.
El Triunfo is a rare and valuable sanctuary that requires continued protection. All the coffee the farmers in this Coop produce is shade grown, and biological corridors are created to facilitate bird and animal migration.

This coffee is one of the best in Mexico and the Coop has the perfect coffee growing condition. This coffee is fruity with honey sweetness, slight lemon-lime acidity and a great chocolate finish.
